Cut the cabbage into pieces. Melt some butter in a saucepan and fry the cabbage. After a few minutes add the vegetable stock, stir and steam with the lid on for 5 - 10 minutes. Possibly stir occasionally. When the cabbage has the desired consistency (I prefer it firm to the bite, but that`s up to you), stir in the crème fraiche and the granulated mustard. Sometimes there is too much broth, then maybe the liquid still binds a little. Season to taste with salt and pepper. This cabbage side dish goes wonderfully with bratwurst and mashed potatoes.
