When looking for a recipe for Caesar`s egg-free dressing, I didn`t find it. So here`s my creation:
Put the milk, vinegar, mustard, capers, garlic and Parmesan in a tall container and mix with the hand blender to a homogeneous mass. Then slowly add the oil (approx. 100-150 ml) until the desired consistency is achieved. It shouldn`t be mayonnaise (so not too firm). When the desired consistency is reached, stir in the yogurt and lemon juice with a spoon and season with salt and pepper.
When the dressing stands a bit, the flavors come out even better. So it can stand for a couple of hours.
Super tasty with lettuce with cucumber and tomato with fried chicken breast and baguette.
