I offer three types of festive canapes – with boiled sausage, with cheese and smoked sausage, and with herring. Canapes are the perfect New Year’s snack. When a lot of friends gather, and there is no time and desire to tinker with complex dishes, a lot of such canapé sandwiches will diversify and decorate the festive menu.

  1. For herring canapés: Cut black bread into rectangular pieces roughly the size of the herring fillets, then brush each piece with a thin layer of butter.
  2. Layer a herring slice and a few thin strips of Crimean sweet onion on each buttered bread piece.
  3. Top with a sprig of fresh dill and a small slice of lemon, then secure each herring canapé with a skewer.
  4. For sausage canapés: Cut white bread into round slices and place a lettuce leaf on each one.
  5. Fold a slice of doctor's sausage into quarters and lay it on the lettuce, then top with a cherry tomato and a sprig of parsley.
  6. Secure each sausage canapé with a skewer.
  7. For smoked sausage and cheese canapés: Cut black bread into round slices using a mold cutter, then top each slice with a thin slice of hard cheese cut to match.
  8. Layer a lettuce leaf on the cheese and top with two slices of Moscow smoked sausage and a black olive.
  9. Secure each smoked sausage and cheese canapé with a skewer.
