Cut off and discard the crusts from the black bread pieces. Cut each piece into 4 parts to use as bases for the canapés. Grate the cheese using a fine grater. Add roughly 2-3 tbsp mayonnaise and black pepper to taste. Mix until well combined. Form the cheese mixture into balls roughly the size of walnuts. Roughly chop the walnuts into large crumbs. Roll half of the cheese balls in the chopped walnuts, coating all sides evenly. Finely chop the dill. Roll the remaining half of the cheese balls in the chopped dill, coating all sides evenly. Cut the red salted fish into thin slices. Roll or fold each fish slice into a rose shape. Assemble each canapé: place a bread piece as the base, top with a cheese ball, then top with a fish rose and secure with a toothpick if needed.
