- Quarter the eggplant and cut out part of the soft casing! Then cut into pieces approx. 1 cm in size!
- Sauté the finely chopped onion in the olive oil and sauté with the chilli (leave whole). Then add the aubergine and fry it vigorously!
- Then deglaze with the white wine and let it get hot, put the lid on and off the stove and let it steep!
