Ingredients

  • 2 m. Eggplant (s), (approx. 500 g)
  • 2 tablespoon olive oil, virgin
  • 1 onion (s), red
  • 4 small chilli pepper (s), (semi-hot - semi picante)
  • 100 ml white wine, dry
  • sea salt
  • Pepper from the grinder

Instructions

  1. Quarter the eggplant and cut out part of the soft casing! Then cut into pieces approx. 1 cm in size!
  2. Sauté the finely chopped onion in the olive oil and sauté with the chilli (leave whole). Then add the aubergine and fry it vigorously!
  3. Then deglaze with the white wine and let it get hot, put the lid on and off the stove and let it steep!
