Peel the carrots and cut into thin slices. Finely chop the garlic.
Cover and heat the carrots, garlic, paprika, sugar and water in a small saucepan. Simmer over medium heat for 12-15 minutes until the carrots are lightly caramelized. Add the vinegar and simmer for another minute. Remove from heat and season with salt.
Arrange the carrots in a bowl, sprinkle with parsley after cooling and serve.
