Peel and roughly grate the carrot and apple. It should be about the same amount of grated carrot as apple or a little more carrot.
Immediately add lemon juice so that the apple does not tarnish. Mix together and season with sugar and a little cardamom. If the apple is sweet enough, you can leave out the sugar.
It is a side salad for pancakes, steamed noodles, potato pancakes and pork or turkey braised meat in a dried fruit sauce.
