Peel the potatoes and carrots and cut them into pieces. Peel the onion and cut into cubes.
Layer the vegetables in a saucepan. Proceed as follows: carrots, potatoes, green beans, onions and, as the last layer, the finely chopped beetroot. Top up with broth so that everything is covered. Let simmer on medium heat for about 30-45 minutes. Season with salt and pepper, season to taste. Garnish with parsley.
