Instructions

  1. Peel the carrots, cut into 1 cm thick slices and cook in boiling water for 10 minutes, not too soft.
  2. Drain the carrots, rinse under cold water and drain. Put the carrot slices with mint leaves, chopped garlic, lime juice and olive oil in a bowl. Puree with the hand blender. Season to taste with salt and pepper and let it cool down.
  3. Serve with white bread and black olives.
