Finely grate the onion and carrots or grate finely with a food processor. Simmer in a saucepan with the butter or margarine and the crushed garlic for about 6-10 minutes. Add the tomato paste and herbs and season with salt.
The carrot spread also tastes very good warm with grilled meat.
It can be preserved in a glass (pour it hot and turn the glass upside down for a few minutes) for several weeks.
The amount makes approx. 500 g of spread. Can be kept open in the refrigerator for approx. 8 days.
