Dice the bacon and onions, fry them in clarified butter and let them take color. Here you can use a little broth to loosen the roast set. Put the bacon and onions in the slow cooker.
Dice the potatoes and carrots and place in the slow cooker. Pour in the broth. Cook everything for 8 hours on the Low level in the slow cooker.
Use a slotted spoon to fish the solid parts out of the slow cooker and mash them in another bowl. Add the broth to the desired consistency or enjoy everything as a stew with pieces.
Season with salt, pepper and possibly ginger, chop the parsley and fold in.
Like any stew, this one tastes better on the second day. The parsley only comes in at the end, but is not unimportant for the taste.
