Instructions

  1. Clean the leek, cut into pieces about 5 cm long and halve each lengthwise. Wash the green parts and cut them into pieces approx. 5 cm long. Briefly blanch in boiling salted water and then drain in a sieve. In the meantime, peel and core the apple and cut into thin slices. Also peel and fillet the orange and also peel the onion and cut into thin strips. Heat a little butter and possibly a spoonful of honey in a pan and sauté the leek and onion. After a while, add the apple and later the orange fillets. Season with salt and cayenne pepper and keep warm.
  2. Briefly wash and dry the catfish fillets. Season both sides with salt. Then season one side with a little black pepper and then turn the fillets over. Season the other side with garlic granules (I don`t know if fresh garlic isn`t too intense ?) Paprika, cayenne pepper and lemon juice. Dust the fillets with the salt and pepper side with flour. Heat a little butter and oil in a pan. Fry the fillets on both sides until they are crispy.
  3. Serve over the vegetables with a slice of lemon and possibly a few chopped walnuts.
  4. the quantities given by Leek & Co are only approximate - they can of course be varied depending on your taste . maybe also grapes or pears fit ?
