Wash the cauliflower and cut into fine florets, remove the thick pieces of stalk.
Heat butter in a pan and add mustard seeds. After a short time they jump around in the pan like popcorn. After about 2 minutes add the turmeric and sweat in the butter. Add cauliflower florets and toss vigorously. Sauté for about 2 minutes while refining with paprika, cumin, fenugreek and other spices if desired. Then add a small cup of water and let everything simmer for about 8 minutes until the water has evaporated. Finally, season with salt and pepper.
