First soak the quinoa in water for at least 4 hours so that the antinutrients are broken down.
Rinse the quinoa thoroughly with hot water before cooking because of the bitter substances. Now bring the quinoa to the boil once with twice the amount of water in which the vegetable stock has already been stirred and then simmer over a low heat for 20 minutes.
Put the cauliflower in a multi chopper to make cauliflower rice. Cut the red and orange peppers into small cubes. Cut the spring onions into small rolls.
Put the cauliflower rice, quinoa, bell pepper, kidney beans, spring onions and the mixed salad in a bowl and mix everything together.
Mix the dressing of lime juice, oil, pepper and salt in a mug. Then pour over the salad and stir everything again.
