Cauliflower Rice with Ham, Mushrooms and Tomatoes

Instructions
Clean and wash the cauliflower, cut into florets and chop in a blender until it is about the size of a grain of rice. If you don`t have a mixer, leave the cauliflower whole and grate it on a coarse grater.
Chop the onion and ham and sauté in a pan with a little oil over medium heat. Chop the mushrooms and tomatoes and add to the pan. Finally add the cauliflower rice and mascarpone and fry a little more.
