Chop the celery and mushrooms (leafy mushrooms, celery about 1/2 cm wide), then mix with the roasted sesame oil, the tamari (or other soy sauce) and the rice vinegar (or apple cider vinegar) and a pinch of chili and mix. Let it sit a little (5 - 10 minutes).
