Clean, wash, pat dry the celery and cut into small pieces (slices). Now sauté the celery for 3-5 minutes in the medium-hot fat. Then season to taste with salt. Now the orange juice is added. Cook the celery over low heat. Try it every now and then, because everyone prefers a different kind of firmness.
Now let the mixture cool down to lukewarm and place in a bowl. Just before serving, fold in the chopped walnut, orange and lemon peel and chopped parsley.
