The recipe for a very tasty Georgian chicken dish, the preparation of which will not take you much time and will not present any problems! I recommend the authentic method of cooking chakhokhbili in a cauldron over a fire. Although, with a strong desire, you can repeat this recipe at home.
Blanch the tomatoes: Score the bottom of each with an X. Bring water to boil, add tomatoes for 1 minute. Remove and let cool slightly. Peel off the skin. Chop the tomatoes into chunks without crushing them heavily.
Peel the garlic and cut into slices. Finely chop the cilantro, basil, and parsley, discarding the stems.
Pour vegetable oil into the cauldron and heat over medium-high heat until hot. Add the chicken thighs and fry on all sides for 10 minutes.
Add the onions, spreading them evenly over the chicken. Cover and simmer over medium heat for 5 minutes until the onions become transparent.
Add the tomatoes, bell pepper, chopped herbs, garlic slices, 1 heaping teaspoon of adjika, 2 tablespoons tomato paste, coriander to taste, hmeli-suneli to taste, fresh chili peppers, and salt to taste. Stir to combine. Cover and simmer over medium heat for 40 minutes.
Uncover and remove the chili peppers from the chakhokhbili.
