  1. Heat butter in a large skillet over medium-high heat. Add the finely chopped onion and fry, stirring occasionally, until soft, 5 to 10 minutes.
  2. Add the sliced mushrooms to the pan with onions and fry over high heat, stirring occasionally, for 3 to 4 minutes.
  3. Add tomato paste and coarse mustard to the pan with mushrooms, then add sour cream. Cook over medium heat, stirring occasionally, for 5 minutes.
  4. Sprinkle with paprika, salt, and ground black pepper to taste.
  5. Serve the mushroom stew on a serving plate and garnish with fresh parsley and a pinch of paprika.
