- Wash the apricots, peel, and cut into slices.
- Crack 3 eggs into a bowl, add 0.75 cups sugar, and beat for 2-3 minutes until pale and smooth.
- Sift the flour with a pinch of salt, then add to the egg mixture and stir gently.
- Add a pinch of vanillin (optional) and mix.
- In a small bowl, mix 0.5 teaspoon soda with 0.5-1 teaspoon vinegar to activate it.
- Add the activated soda mixture to the batter and stir gently from bottom to top.
- Add the apricot slices and mix gently until evenly distributed.
- Grease the slow cooker bowl with 10 g butter and pour the batter in.
- Cook on Bake or Soup mode for 40 minutes.
- Turn the charlotte out onto a serving platter and dust with powdered sugar if desired.
