- Wash, peel and dice the potatoes. Clean and wash the leek and cut into rings. Peel and dice the onions.
- Braise the vegetables in oil in a large saucepan. Pour in the hot broth, bring to the boil briefly and cook over medium heat for about 20 minutes.
- Puree part of the soup. Add processed cheese and heat again. Season to taste with salt and pepper.
- Put the smoked salmon cut into fine strips on top of the soup.
