Wash the chicken thighs. Blot the water off them with a paper towel. Season with pepper and salt on both sides. Sprinkle flour evenly on both sides of the thighs. Crack the egg in a separate container and mix thoroughly.
Dip the meat completely into the egg on both sides.
Immediately transfer the egg-soaked thighs to the bowl of breading mixture and roll on both sides.
