Mix the flour, cheese, butter and almonds with the hand mixer. Stick the egg white with a fork and add a little cayenne pepper and salt to the batter. Mix everything well again. Wrap in foil and put in the refrigerator for about an hour.
Preheat the oven to 200 degrees circulating air. Line a baking sheet with parchment paper. Roll out the dough. I do this without a rolling pin. Simply leave the dough on the spread sheet, cover with another sheet and press flat with your hands. Cut out any biscuits with a cookie mold and place on the tray.
Bake in the oven for 7-9 minutes. Then sprinkle with rosemary and a little cayenne pepper and carefully press it down with your fingers. Tastes warm and cold.
