For dough (glass volume 200 ml):
Kefir – 1 glass
Grated cheese (we have homemade mozzarella) – 1 glass
Combine the flour, sugar, salt, and soda in a large bowl and mix well.
Add the kefir and grated cheese, then knead the dough for 3-5 minutes. Let the dough rest for 20 minutes.
While the dough rests, heat a little vegetable oil in a large pan over medium heat. Add the diced onions and fry for 5-7 minutes until golden brown.
Add the chopped cooked chicken to the pan and stir well to combine. Season with salt to taste. Remove from heat.
Dust a work surface with flour. Roll the dough into a long log, then divide into equal-sized portions.
Stretch each dough portion by hand into a thin, flat cake.
Place roughly 1 tablespoon of the chicken-onion filling on each cake.
Fold and pinch the edges together to seal, forming a pie shape.
Heat a little vegetable oil in a large pan over low heat. Working in batches as needed, fry the pies in the hot oil, covered with a lid, for 3-4 minutes per side until golden brown on both sides.
