- Peel and roughly grate the potatoes. Mix with grated cheese, eggs, salt, pepper and nutmeg. Fry small hash browns in hot fat and keep warm.
- Just rub the oyster mushrooms a little and cut them fresh, fry on both sides in the remaining fat and spread over the hash browns.
- Place a small teaspoon of cream cheese, tomato quarters and some cress on the mushroom hash browns and serve.
- A delicious vegetarian main course or a smaller amount as a warm starter.
