Make yeast dough, do not let it rise. Shape rolls, cut pieces, shape round or oval rolls. Let rise for 30-45 minutes. Then bake in a preheated oven (200-230 degrees) for about 10 minutes.
Now put grated cheese (e.g. Emmentaler) on top and bake for another 10 minutes.
TIP: be sure to use FRESH yeast. It doesn`t work so well with dry yeast.
