Instructions

  1. Cut carrots and onions into small cubes.
  2. Heat olive oil in a saucepan and fry vegetables for 5 minutes until soft.
  3. Then add finely chopped tomatoes and garlic, tomato paste, simmer for 3-5 minutes. Also, season with spices.
  4. Then add vegetable broth. Stir well, bring to a boil, reduce heat and cover saucepan. Cook the soup for 10 minutes on low heat.
  5. Then add green peas and cook for another 5 minutes.
  6. Then add tortellini, bring to a boil and cook until tender. Serve the soup hot and sprinkle with grated cheese.
