Stir the pudding powder with a little cherry juice until smooth - bring the cherries to the boil with juice, reduce the pudding powder while stirring - sweeten as desired - fill half the amount into dessert glasses - allow to cool
Whip the whipped cream firmly, stir in the mascarpone, add sugar to taste and stir in the amaretto.
Divide the cream on the cooled cherry pudding, spread the biscuit pieces over it and press lightly into the cream - pour the remaining cherry pudding over it - chill for 20 minutes.
