Instructions

  1. Stone the cherries, then put them in a saucepan. Scrape out the pulp of the vanilla pod and add to the cherries, as well as the pod itself. Add the preserving sugar to the cherries and let everything stand for 3 hours, stirring occasionally.
  2. Remove the pod, add the sherry and bring to the boil for 4 minutes. Fill into prepared twist-off glasses.
  3. Very, very tasty.
