Instructions

  1. Mix the chestnut puree, egg yolk and cherry well. The ingredients should be at room temperature. Crumble the chocolate and let it melt in a double boiler. Do not beat the cream too hard and fold it into the chestnut mixture. Then slowly mix in the melted chocolate. Put the whole thing in a bowl, cover with cling film and put in the refrigerator for two to three hours.
