When baking chicken, the method of filling the underskin space of the chicken with butter and spices works very effectively. Then the chicken is not dry. Very tender.
Wash the chicken and remove any remaining feathers. Pat dry with paper towels.
Mix the softened butter with the grill seasonings to form a paste.
Gently lift the skin on the chicken breast and insert a portion of the butter mixture under the skin. Rub the remaining butter mixture over all sides of the chicken. Season with ground black pepper and salt to taste.
Tie the chicken legs together with kitchen string.
Wrap the entire chicken tightly in foil. Preheat the oven to 200°C (392°F). Bake covered for 60 minutes.
Remove the foil and bake uncovered for 30 minutes more, or until the chicken reaches an internal temperature of 74°C (165°F) and the skin is golden brown.
