Instructions

  1. Rinse the chicken breast fillets under running water and pat dry. Season with salt and pepper, then slice.
  2. Wash the tomatoes, remove the stalks, and cut into slices.
  3. Drain the mozzarella and cut into thick slices.
  4. Preheat the oven to 200°C (392°F) with top/bottom heat, or 180°C (356°F) with convection.
  5. In an ovenproof dish, layer the chicken breast, tomato, and mozzarella slices in a fan-like shape. Season with salt and pepper.
  6. Bake for 25 minutes until the mozzarella is golden brown.
  7. Remove from the oven, garnish with basil leaves, and serve with rosemary potatoes as a side dish.
