Instructions
- Rinse the chicken breast fillets under running water and pat dry. Season with salt and pepper, then slice.
- Wash the tomatoes, remove the stalks, and cut into slices.
- Drain the mozzarella and cut into thick slices.
- Preheat the oven to 200°C (392°F) with top/bottom heat, or 180°C (356°F) with convection.
- In an ovenproof dish, layer the chicken breast, tomato, and mozzarella slices in a fan-like shape. Season with salt and pepper.
- Bake for 25 minutes until the mozzarella is golden brown.
- Remove from the oven, garnish with basil leaves, and serve with rosemary potatoes as a side dish.
