Mash the ginger and garlic in a mortar. Marinate the chicken breast cubes with the paste, honey, curry and soy sauce for about 30 minutes.
Heat some oil in a pan and brown the chicken in it. When the honey begins to caramelize and darken, stir in the cream and simmer for a few more minutes. Season to taste with salt. You can also stir in well-cooked vegetable scraps such as beans or leeks.
