- Wash the chicken breast and pat dry with paper towels.
- Cut the chicken breast into portions across the fibers.
- Place each piece between plastic wrap and pound with a hammer until flattened and even.
- Season each piece with salt and pepper to taste on both sides.
- Prepare the batter: crack 2 eggs into a bowl, add salt to taste, whisk in enough flour to make a smooth batter, and beat until well combined.
- Heat 4 tbsp vegetable oil in a frying pan over medium-high heat until shimmering.
- Dip each chicken piece in batter to coat both sides, then place in the hot oil.
- Fry over medium heat for 3-5 minutes until the first side is golden brown.
- Flip and fry for 3-5 minutes on the other side until golden brown.
- Check that the internal temperature reaches 74°C (165°F), then serve with your favorite side dish or vegetables.
