Cut the chicken breast into slices roughly 2 cm wide. Press each slice flat by hand until about 1 cm thick. Season both sides with salt and pepper.
In a shallow bowl, whisk together the eggs and milk. Add the flour, paprika powder, curry, oregano, and grated parmesan. Mix to a thin paste, adding more milk if the mixture is too thick.
Coat each chicken slice in the cheese mixture, pressing gently with a spoon.
Heat the oil in a large pan over medium-high heat until shimmering. Add the coated chicken and fry for 3-4 minutes on each side until golden brown and the internal temperature reaches 74 °C (165 °F).
