Heat oil in a pan over medium-high heat. Fry the chicken fillets for 3-4 minutes on each side until golden. Season with salt and pepper and remove from the pan.
Add a splash of wine to the pan, reduce heat to medium, and bring to a simmer while scraping up any browned bits. Add the 125 ml cream and season with salt and pepper.
Halve the cheese slices. Wash the fresh basil and remove the leaves.
Pour the sauce into a baking dish and arrange the chicken fillets in it.
Brush each fillet with the cream cheese with herbs Provence. Arrange the basil leaves on top of each fillet, top with the halved cheese slices, and sprinkle the grated Parmesan over everything.
Bake in a preheated oven at 200°C (392°F) for 15-20 minutes until the chicken reaches an internal temperature of 74°C (165°F).
