Rinse the fillets. Pat dry with kitchen paper and season with salt. Put the inner fillets in a bag with the flour, paprika and pepper. Close this and mix everything well.
Whisk eggs, parmesan and, if you like, salt until you have a tough batter. Knock off the flour mixture from the fillets. Pull the fillets through the parmesan batter so that they are coated all around.
Fry the fillets in a large amount of fat in a deep frying pan or in the deep fryer until they are evenly browned. Then degrease on kitchen paper.
Serve the meat. Vegetables and potatoes of all kinds go well with it.
