Rinse the chicken, pat dry and divide into 8 portions.
For the marinade, mix the honey with orange juice, mustard, soy sauce and pepper well. Brush the chicken pieces with the marinade and let it steep for about 2 hours.
Heat the oil in a roasting pan and fry the chicken parts well on all sides. Possibly add a little marinade and cook slowly for 30-45 minutes. Turn from time to time and add a little water if necessary.
Serve the cooked chicken garnished with sprigs of thyme.
