Instructions
- Cut the chicken breast into bite-sized pieces.
- Heat the sesame oil in a large pan over medium-high heat.
- Add the chicken pieces and fry for 4-5 minutes, stirring occasionally, until lightly golden.
- Dice the onion and add to the pan, then stir frequently for 3-4 minutes until the onions are softened.
- Sprinkle the garam masala over the mixture and cook for 1-2 minutes, stirring to coat.
- Add the can of chunky tomatoes and stir to deglaze the pan.
- Stir in the peanut butter until fully combined.
- Pour in the vegetable stock and stir until you have a smooth sauce.
- Season with pepper and chilli flakes to taste.
- Reduce heat to medium-low and simmer for 4-6 minutes until the chicken reaches 74°C / 165°F internally.
- Chop the parsley finely and sprinkle over the dish.
- Serve with rice, millet, Ebly, or baguette.
