Easy hot meals are great for dinner, so I’ll show you how to cook chicken in Spanish. It turns out such a hearty dish is very aromatic, juicy and healthy.
Cut the chicken into small pieces. Roughly chop the onion. In a bowl, mix the olive oil, wine vinegar, salt, minced garlic, and black pepper to taste to make the marinade.
Add the chicken and onion to the marinade and toss to coat. Cover with plastic wrap and refrigerate for 2 hours. While chilling, cut the sweet peppers into strips.
Arrange the marinated chicken, sweet pepper strips, olives, and rosemary in a fireproof baking dish. Bake in a preheated oven at 170°C (338°F) for 50 to 60 minutes until the chicken reaches an internal temperature of 74°C (165°F).
