Ingredients
Chicken – 1.4 Kilograms
Soy sauce – 4 Tbsp. spoons
Chili paste – 1 tablespoon spoon (or a mixture of garlic, chili and vegetable oil)
Wash the chicken and pat dry. Cut along the backbone to butterfly it open and lay flat on a work surface, skin-side down.
Mix 4 Tbsp soy sauce, 1 Tbsp chili paste, and 1 Tbsp grated ginger to make the marinade. (Or use 1 Tbsp garlic-chili oil mixture instead.) Spread over the inside of the chicken. Flip skin-side up and spread any remaining marinade over the outside.
Place the chicken in a deep baking dish. Peel the onion, cut into thin half-rings, and bruise slightly to release juice. Scatter over the chicken. Cover and refrigerate for 1 hour 30 minutes.
Remove from refrigerator. Drizzle the chicken with 2-3 Tbsp vegetable oil, cover tightly with foil, and bake at 200°C (392°F) for 1 hour.
Remove the foil. Transfer the onions and pan juices to a separate container. Return the chicken to the oven uncovered and bake for 15-20 minutes until the skin is golden brown and the internal temperature reaches 74°C (165°F).
Blend the onions and pan juices until smooth and serve the sauce with the chicken.
