Cut 4 chicken breast fillets into small bite-sized pieces. Mix dried ginger (1 tbsp), dried garlic (1 tbsp), soy sauce (2 tbsp), sesame oil (2 tbsp), and sugar (0.5 tbsp) in a bowl. Add chicken pieces to the marinade, toss to coat, and refrigerate for 30 minutes. While chicken marinates, cut red and yellow peppers into roughly 1.5-2 cm squares. Cut red onion into quarters and gently separate each quarter into individual petals. Preheat oven to 200°C (392°F). Thread chicken pieces, pepper squares, and onion petals alternately onto long skewers. Line a baking sheet with baking paper and place skewers on it. Bake for 15 minutes. Flip skewers and bake for 10-20 minutes more until chicken reaches 74°C (165°F) at the thickest part. Optional: turn on grill or broil function for the final 5 minutes for a crispier exterior. Serve hot with fresh herbs or salad.
