Cut the chicken legs open on the inside, fold them apart, and season with salt and pepper.
Place the chicken legs skin-side up in an ovenproof baking dish. Drizzle 1 teaspoon of clarified butter over each leg. Dissolve half a chicken broth cube in 125 ml water and pour the broth around (not over) the chicken legs. Place in a preheated 200°C (400°F) oven and bake for 20 minutes.
While the chicken bakes, mix the Emmentaler cheese, egg, breadcrumbs, fresh herbs, salt, and pepper together to form the crust mixture.
Remove the chicken from the oven. Press the crust mixture firmly onto the top and sides of each chicken leg. Return to the 200°C (400°F) oven and bake for 8-10 minutes, until the crust is golden brown and the chicken reaches an internal temperature of 74°C (165°F) when measured at the thickest part with a meat thermometer.
