Chicken Legs with Cherry Tomatoes
Instructions
- Wash and pat dry the chicken legs. Season with paprika (no salt).
- Place the chicken on a lightly oiled baking dish and roast in a preheated oven at 220°C (428°F) for 40 minutes.
- Mix the balsamic vinegar, paprika, and brown sugar in a small bowl.
- While the chicken roasts, wash the cherry tomatoes, score them crosswise, and season with thyme and basil.
- Brush the chicken legs with the balsamic mixture every 10-15 minutes during the 40 minutes of roasting.
- After 20 minutes of roasting, add the seasoned cherry tomatoes to the baking dish and continue roasting for the remaining 20 minutes.
- The chicken is done when the internal temperature reaches 74°C (165°F).
