Instructions

  1. Heat the oil in a large pan over medium-high heat and add the onion strips. Fry for 3-5 minutes until they start to soften.
  2. Wash the poultry liver and pat dry. Dust with flour and add to the pan with the onions. Fry for 2-3 minutes.
  3. Add the pickled cucumber strips and tomato pieces to the pan.
  4. Pour in the white wine and season with salt, pepper, and thyme.
  5. Reduce heat to medium and simmer for 10 minutes until the liver is cooked through (internal temperature 74 °C / 165 °F).
  6. Sprinkle with fresh parsley and serve with mashed potatoes.
