Instructions
- Heat the oil in a large pan over medium-high heat and add the onion strips. Fry for 3-5 minutes until they start to soften.
- Wash the poultry liver and pat dry. Dust with flour and add to the pan with the onions. Fry for 2-3 minutes.
- Add the pickled cucumber strips and tomato pieces to the pan.
- Pour in the white wine and season with salt, pepper, and thyme.
- Reduce heat to medium and simmer for 10 minutes until the liver is cooked through (internal temperature 74 °C / 165 °F).
- Sprinkle with fresh parsley and serve with mashed potatoes.
