- Cut each chicken fillet in half lengthwise.
- Place each piece between plastic wrap and pound to flatten.
- Season all pieces with salt and ground black pepper.
- Spread mushroom caviar on each flattened fillet piece.
- Roll each fillet tightly from one end to the other, enclosing the mushroom caviar.
- Heat 2 tbsp vegetable oil in a large pan over medium-high heat.
- Place the rolls seam-side down in the hot oil.
- Fry for 8-10 minutes until the seam side is golden brown.
- Turn the rolls over and fry for another 8-10 minutes until all sides are golden brown and the internal temperature reaches 74 °C (165 °F).
