Cut the chicken breast fillets into pieces 4 cm long and about finger thickness.
In a mortar, mix the finely diced garlic, a handful of fresh basil, grated parmesan, salt, and pepper until combined into a paste.
Coat the chicken pieces thoroughly with the paste. Alternatively, place the chicken pieces and paste in a freezer bag, seal, and knead gently for 2-3 min until evenly coated. Refrigerate for at least 15 minutes.
Wrap each chicken piece tightly in a bacon slice with the bacon end facing down. Arrange on a baking sheet in a single layer.
Bake in a preheated oven at 200°C (392°F) for 20 minutes, until the chicken reaches an internal temperature of 74°C (165°F).
Serve warm with baguette bread, or allow to cool and serve cold as finger food. For cold serving, prepare up to 1 day ahead and refrigerate.
