Of course, there are many ways to prepare chicken, although the principle is the same – it is fried under load. I offer you my version of cooking this fragrant, delicious chicken.
Select a chicken weighing no more than 900-1000 g. Flatten gently by beating with a meat mallet, being careful not to damage the bones.
Finely chop the garlic and combine with coarse salt, 30 g butter, and seasoning for chicken tobacco to form a paste.
Rub the chicken generously with the paste on both sides. Refrigerate for at least 1 hour (longer is better).
Heat vegetable oil (1-2 tablespoon) and butter in a wide frying pan with a thick bottom over medium heat.
Place the chicken breast side down in the pan. Cook on medium heat for 2 minutes, then reduce heat to low.
Place a weighted lid or heavy object (such as a water-filled saucepan) on top of the chicken. Cook for 15-20 minutes on low heat.
Remove the weight, flip the chicken over, replace the weight, and cook for another 15-20 minutes on low heat. The chicken is done when the internal temperature reaches 74 °C (165 °F).
Transfer the cooked chicken to a serving dish.
In the same pan, fry sliced onions and potatoes in the remaining oil and chicken juices for roughly 10-15 minutes until golden and tender.
