Mix the ginger, garlic, hoisin sauce, chilli sauce, soy sauce, sugar and water in a bowl. Put the chicken wings in a plastic bag and add the marinade. Seal the plastic bag and mix everything thoroughly.
Place in the fridge to marinate for at least 1 hour, but better for 24 hours.
